Lettuce Wraps - Carrot, Egg & Hummus

Coming off of a crazy busy weekend (hosting Elle's 2nd birthday party), I realized last night that I had a TON of veggies left from the week from our Green BEAN Delivery order that wasn't used.
{Let me chime in right here, and tell you what has happened since we've been Green BEAN Delivery customers: we eat what is in the house BEFORE running to the store, which has saved us $$! Plus, Chad has noticed that I'm not as the store as often (which I am absolutely OK with! Going to the store with a toddler is SO not convenient anyways!) It has been amazing so far, and if you have a hard time incorporating veggies in your meals, this will definitely help! When it gets shipped to you, you find a way to eat it. End of story. I now have the mindset that I want to use up everything before our next delievery on Fridays, so I have to be creative - which was the result last night with this creation! I highly recommend Green BEAN Delivery! Plus, I finally found the bread I 'approve' of, and Oh My Goodness it's delicious (and only 5-6 ingredients!)
Many people don't know that you can completely customize your GBD bins. I get on every week (before noon on Mondays) to decide what I want delivered that Friday. You can choose your fruits, veggies, grocery, meat, and everything in between. Yes, they even have grocery! What I love about it is that on most items they post the ingredients, and tell you if it is GMO-free, Organic, local (and where from if local), etc. You can even decide what you want occurring on every order for those you know you will use every week. Our recurring order is two 1/2 gallons of the whole milk, Honey Oat bread, pretzel bread (omg delish!), a dozen eggs, and butter (every other week). It's been SO nice always having those on hand!
Long story short, we've been super happy with GBD, and I highly recommend. My ultimate goal is to get everything we need through this, and only have to shop an actual store for toilet paper... I'm slowly but surely getting there. (My recent obsession with coconut oil is definitely helping!) Can you imagine how amazing budgeting for food would be like that?
I highly recommend at least trying it out. If anything, you get some super healthy food delivered to your door for a week, now if that isn't motivation, I don't know what is!

OK, now on to the recipe!
On hand, I had an extra head of lettuce, an abundance of carrot bunches, and some leftover hummus from the party. I also didn't use up many of our local eggs, and since we'll get more this week, I decided to include them for a good protein punch. I've heard about and have seen lettuce wraps, so I decided to make my own. They were a hit and super easy to make! Elle loved them {as you will see - I think she really liked the cruncy texture}. The best part is that you can use whatever veggies you have on hand!
INGREDIENTS
lettuce (or any type of leafy green, really)
hummus (any variety, mine happened to be Roasted Red Pepper from Whole foods)
shredded carrots (I used the biggest side of my cheese grater)
2 eggs, fried or boiled (I used fried this time, as I didn't have time to boil)
INSTRUCTIONS
I started by cutting the lettuce from the 'rib', so that it would roll easier. (Although I figured this out after about 2, so you will see some ribs)
Spread hummus, sprinkle carrots, and lay strips of egg on the lettuce.
Roll it all together and voila!
